Try this grilled gobi recipe for a balance of taste and health

 

The humble gobi is the perfect healthy vegetable to grill and enjoy as a snack or appetizer. Here is an easy and healthy recipe that will make you drool.

We all love grilled dishes for their charred texture, delicious flavour, and crunch. While there are many foods that can be used to prepare grilled dishes, gobi is one vegetable that works best as a snack and appetizer.

Gobi or cauliflower is a plant that offers a range of nutrients such as protein, fiber, omega-3 fatty acids and vitamins. This vegetable provides its customers with a number of health benefits such as improving heart health, enhancing liver function and managing weight.

Now that we know gobi is a great choice for a healthy and nutritious snack, how about going straight to the recipe?

Grilled Gobi

Ingredients you will need

  • 1 medium sized guppy
  • 2 cups of yogurt
  • Half a tablespoon of ginger and garlic paste
  • Half a teaspoon of red chili powder
  • Quarter or 1 teaspoon garam masala powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder (ground coriander)
  • 1 teaspoon chaat masala
  • ½ teaspoon Ajwain (Clove seeds)
  • 1 teaspoon kasuri methi (dry fenugreek leaves)
  • 2 tablespoons besan (gram flour)
  • 1 or 2 teaspoons lemon juice
  • 1 tablespoon of oil
  • Black salt or rock salt as needed
Preparation

Step 1: Use a cotton swab or cotton gauze to prepare the suspended curd, allowing the whey to drain.

Step 2: Rinse and cut the gobi into medium sized florets. It is important to keep all of the florets the same size as they help grill evenly. Next, boil the water with a pinch of salt and add the chopped gobi in it and simmer for three to five minutes.

Step 3: Drain the chopped gobi and mix with the suspended curd, ginger, garlic paste, red chilli powder, garam masala powder, turmeric powder, coriander powder, lemon juice, ajwain, kasuri methi and besan.

Step 4: Soak the ingredients for an hour and store in the refrigerator.

Step 1: Preheat the oven to 200°C. Grease the marinated gobi with oil and place it on the grill rack.

Step 2: Roast for 25-30 minutes and check if the flowers have turned brown.

Step 3: Remember to remove the tray and flip the florets over 10 minutes after grilling.

Step 4: Once grilled, remove from tray and arrange on a plate and sprinkle a few Chat masala before submitting.

For even more zing, squeeze a little lemon juice over the grilled gobi and serve with mint chutney. The same combination of ingredients can also be baked as long as the gobi is pre-cooked. This recipe can be replicated using mushrooms, paneer, and chicken as well, and is bound to give you that rustic, balanced and spicy flavour.
